  • 3 tbsp Butter melted; margarine can be used for a dairy-free option.
  • 3 tbsp Brown Sugar Provides sweetness; can use light or dark brown.
  • 2 tbsp Ground Cinnamon for filling
  • 0.5 tsp Ground Cinnamon for coating
  • 3 large Eggs Can substitute with flax eggs for vegan version.
  • 1 tbsp Milk Any non-dairy milk works well.
  • 0.5 tsp Vanilla Extract Enhances the flavor.
  • 2-3 tbsp Butter for frying; high smoke point oils are a great alternative.
Optional Topping
  • Maple Syrup Drizzle over warm roll-ups or pair with fresh fruit!

Equipment

  • Non-stick skillet
  • Rolling Pin
  • shallow bowl

Method

Step-by-Step Instructions
  1. Start by removing the crusts from each slice of white sandwich bread. Using a rolling pin, flatten each slice gently until it's about ¼ inch thick.
  2. In a small bowl, combine the melted butter, brown sugar, and 2 tablespoons of ground cinnamon until well mixed. Spread the mixture evenly over each flattened bread slice.
  3. Carefully roll each slice of bread tightly from one end to the other, ensuring the filling stays inside. Press the edges to seal them.
  4. In a shallow bowl, whisk together the eggs, 1 tablespoon of milk, the remaining ½ teaspoon of cinnamon, and vanilla extract until well combined.
  5. Preheat a non-stick skillet over medium heat and add 2-3 tablespoons of butter until melted.
  6. Take each roll-up and dip it into the egg mixture, ensuring it's coated lightly on all sides. Place each roll seam-side down into the skillet.
  7. Cook for about 2-3 minutes, rotating them gently until they’re golden brown on all sides.
  8. Remove the roll-ups from the skillet and place them on a serving platter. Sprinkle with cinnamon sugar if desired.
