  • 2 tablespoons Sugar Brown sugar enhances caramelization

  • 2 Large Eggs Can substitute with egg whites or vegan eggs
  • Salt Adjust as needed
  • White Pepper Black pepper can be used instead
For Serving
  • 2 cups Cooked White Rice Brown rice or cauliflower rice for a healthier option
  • Furikake Can substitute with sesame seeds
  • Green Onion Chives can be an alternative
  • Fried Garlic Garlic powder works in a pinch

Method
 

Step-by-Step Instructions
  1. Combine 2 tablespoons of soy sauce with 1 tablespoon of water in a small bowl to make the glaze.
  2. Crack 2 large eggs into a bowl, add salt and white pepper, then whisk until blended.
  3. Preheat a skillet over medium heat, add oil, and pour in the egg mixture. Stir gently for 2-3 minutes until set.
  4. In the same skillet, add diced Spam and sear for 1-2 minutes on each side until crispy.
  5. Sprinkle 2 tablespoons of sugar over the crispy Spam, then add the soy sauce mixture and simmer for 3-4 minutes.
  6. Serve by spooning 2 cups of cooked rice onto plates, then top with caramelized Spam and scrambled eggs. Garnish with fried garlic, furikake, and green onions.
