Ingredients

For the Filling
  • 12 large eggs Essential for structure; can use pre-cooked scrambled eggs for convenience
  • 2 avocados Choose Hass avocados for optimal flavor
  • 2 tablespoons lime juice Freshly squeezed is always best
  • 1 clove garlic Fresh garlic enhances flavor dramatically
  • 1 small jalapeño Deseed for a milder kick or keep the seeds for more heat
  • 1/4 teaspoon cayenne pepper Adjust based on your spice preference
  • 1/2 teaspoon kosher salt Always taste and adjust seasoning to your liking
  • 1/4 cup fresh cilantro Parsley can be a good substitute if needed

Equipment

  • Saucepan
  • Food Processor
  • Large bowl
  • Spoon
  • Piping bag

Method

Directions
  1. Start by placing 12 large eggs in a saucepan and covering them with cold water. Bring the water to a vigorous boil over medium-high heat, then remove the saucepan from heat, cover, and let the eggs sit for 18 minutes.
  2. Carefully transfer the eggs to a large bowl filled with ice water. Let them sit for about 10 minutes to cool completely.
  3. Once the eggs are cooled, peel them and cut each egg in half lengthwise. Remove the yolks and place them in a food processor. Add ripe avocados, lime juice, minced garlic, jalapeño, cayenne pepper, and kosher salt. Blend until smooth.
  4. Using a spoon or a piping bag, fill the hollowed egg whites with the creamy avocado mixture. Garnish with a sprinkle of cayenne pepper and cilantro leaves.
  5. Serve immediately to maintain their vibrant color and flavor.
