Step-by-Step Instructions
  1. In a large bowl, mix flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water to hold the dough together. Chill the dough in the fridge for at least 1 hour.
  2. Preheat oven to 425°F (220°C). Peel, core, and slice the Honeycrisp apples, mixing them with brown sugar, cinnamon, nutmeg, and lemon juice.
  3. Roll out the chilled dough on a floured surface. Place in pie plate and trim excess.
  4. Fill the pie crust with the apple mixture and sprinkle cornstarch. Roll out the second dough for the top crust, sealing the edges.
  5. Cut slits in the top crust for steam and brush with an egg wash. Bake for 15 minutes, then reduce temperature to 350°F (175°C) for 30-40 minutes.
  6. Once baked, let cool on a wire rack for at least 2 hours before slicing.
  7. Slice and serve warm, optionally with ice cream or whipped cream.
