  2. In another bowl, blend together melted butter, Biscoff cookie butter, brown sugar, granulated sugar, and vanilla extract until smooth.
  3. Add the egg and mix thoroughly, then gradually incorporate the dry ingredients.
  4. Fold in chocolate chips until evenly distributed.
Step 2: Chill the Dough
  1. Cover the cookie dough tightly with plastic wrap and refrigerate for 30 minutes.
Step 3: Preheat Oven
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Step 4: Coat the Dough
  1. In a shallow bowl, mix together granulated sugar and ground cinnamon for the coating.
  2. Once dough is chilled, scoop it into 2-ounce balls and roll each in the cinnamon-sugar mixture.
