Step 1: Prepare the Dough
- In a large mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt until well combined.
- In another bowl, blend together melted butter, Biscoff cookie butter, brown sugar, granulated sugar, and vanilla extract until smooth.
- Add the egg and mix thoroughly, then gradually incorporate the dry ingredients.
- Fold in chocolate chips until evenly distributed.
Step 2: Chill the Dough
- Cover the cookie dough tightly with plastic wrap and refrigerate for 30 minutes.
Step 3: Preheat Oven
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Step 4: Coat the Dough
- In a shallow bowl, mix together granulated sugar and ground cinnamon for the coating.
- Once dough is chilled, scoop it into 2-ounce balls and roll each in the cinnamon-sugar mixture.
