Preparation
- Grease the inside of the crockpot insert with cooking spray or oil.
- Layer the cubed chicken at the bottom of the crockpot.
- Add diced onions and minced garlic over the chicken.
- Whisk together soy sauce, sesame oil, and oyster sauce, then pour over chicken and aromatics.
- Toss frozen mixed vegetables over the chicken and sauce layer.
- Cover and set to cook on low for 4 hours or high for 2 hours.
- After cooking, stir in cold cooked rice.
- Create a well in the rice and pour in the beaten eggs; let sit for 3-5 minutes.
- Gently stir the eggs into the rice mixture.
- Taste and adjust seasoning with salt, pepper, and crushed red pepper flakes if desired.
- Cover and cook on high for an additional 15-20 minutes.
- Garnish with green onions and serve.
