  • 1 pound Boneless Skinless Chicken Breasts Cut into bite-sized cubes.
For the Rice
  • 3 cups Cold Cooked White Rice Essential for preventing mushiness.
For the Vegetables
  • 1 cup Frozen Mixed Vegetables No prep needed.
  • 1 medium Onion Diced.
  • 2 cloves Garlic Minced.
For the Flavor
  • 1/4 cup Soy Sauce Opt for reduced-sodium.
  • 2 tablespoons Sesame Oil
  • 2 tablespoons Oyster Sauce Can substitute with soy sauce and sugar.
For the Final Touch
  • 2 large Eggs Lightly beaten.
  • 2 tablespoons Green Onions Sliced for garnish.

Method
 

Preparation
  1. Grease the inside of the crockpot insert with cooking spray or oil.
  2. Layer the cubed chicken at the bottom of the crockpot.
  3. Add diced onions and minced garlic over the chicken.
  4. Whisk together soy sauce, sesame oil, and oyster sauce, then pour over chicken and aromatics.
  5. Toss frozen mixed vegetables over the chicken and sauce layer.
  6. Cover and set to cook on low for 4 hours or high for 2 hours.
  7. After cooking, stir in cold cooked rice.
  8. Create a well in the rice and pour in the beaten eggs; let sit for 3-5 minutes.
  9. Gently stir the eggs into the rice mixture.
  10. Taste and adjust seasoning with salt, pepper, and crushed red pepper flakes if desired.
  11. Cover and cook on high for an additional 15-20 minutes.
  12. Garnish with green onions and serve.
