  • 2 large eggs 1 yolk reserved for each patty
  • 1 cup breadcrumbs or crushed crackers
  • 1 cup vegetables finely chopped, e.g., onions, bell peppers

  • as needed tablespoons cooking oil for frying
For Serving
  • 4 slices garlic toast
  • 1 cup fresh salad arugula with lemon vinaigrette
  • 1 medium avocado sliced or mashed

Step-by-Step Instructions
  1. In a medium bowl, mix together the drained sardines, eggs, breadcrumbs, and finely chopped vegetables until the mixture holds together like a soft dough. Incorporate spices for flavor.
  2. Form the mixture into 2-3 patties, about an inch thick, making a deep well in the center for the egg yolk.
  3. Refrigerate the patties for 10-15 minutes to help firm them up.
  4. Remove the patties from the refrigerator, and carefully place an egg yolk into the well of each patty.
  5. Heat oil in a skillet over medium heat, then gently place the patties in the skillet, yolk-side up. Cook for 6-8 minutes until golden brown.
  6. Remove the patties from the skillet and drain on a paper towel. Serve warm with garlic toast or a salad.
