- In a medium bowl, mix together the drained sardines, eggs, breadcrumbs, and finely chopped vegetables until the mixture holds together like a soft dough. Incorporate spices for flavor.
- Form the mixture into 2-3 patties, about an inch thick, making a deep well in the center for the egg yolk.
- Refrigerate the patties for 10-15 minutes to help firm them up.
- Remove the patties from the refrigerator, and carefully place an egg yolk into the well of each patty.
- Heat oil in a skillet over medium heat, then gently place the patties in the skillet, yolk-side up. Cook for 6-8 minutes until golden brown.
- Remove the patties from the skillet and drain on a paper towel. Serve warm with garlic toast or a salad.
