Ingredients
  

Filling Ingredients
  • 1 block Firm Tofu Press to remove excess water
  • 2 medium Carrots Finely shredded
  • 1 cup White Cabbage Finely shredded
  • 1 cup Shiitake Mushrooms Chopped, fresh or dried (rehydrated)
  • 2 cloves Garlic Minced
  • 1 tablespoon Ginger Finely grated fresh
  • 1 tablespoon Sesame Oil Toasted for richer flavor
  • 1 teaspoon Five-Spice Powder For depth of flavor
  • 2 tablespoons Tamari/Soy Sauce
  • 100 grams Vermicelli/Glass Noodles Soaked until soft
Wrapping Ingredients
  • 10 sheets Rice Paper Sheets Round sheets preferred
Dipping Sauce Ingredients
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Sesame Seeds Lightly toasted
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Maple Syrup Adjust to taste

Method
 

Instructions
  1. Prepare tofu by removing excess water and crumbling it into a large mixing bowl.
  2. Add finely shredded carrots, white cabbage, and chopped shiitake mushrooms to the bowl with crumbled tofu.
  3. Mix in minced garlic, grated ginger, sesame oil, five-spice powder, and tamari sauce, adjusting seasoning to taste.
  4. Cook filling in a non-stick pan with vegetable oil over medium heat for 12-15 minutes.
  5. Soak vermicelli noodles in boiling water for 5-7 minutes, then drain and mix with the cooled filling.
  6. Soak each rice paper sheet in lukewarm water for 10 seconds, then lay flat and add filling. Wrap tightly.
  7. Cook dumplings in a frying pan over medium-high heat for 3-4 minutes on each side until golden brown.
  8. Combine soy sauce, sesame oil, sesame seeds, rice vinegar, and maple syrup to make the dipping sauce.
