Instructions
  1. Make the Creamy Avocado Sauce: In a food processor, blend together half of a medium avocado, ¼ cup of sour cream, the juice of half a lime, cilantro leaves, kosher salt, and water. Process until smooth and creamy, then chill.
  2. Cook the Turkey and Onions: Heat 1 tablespoon of avocado oil in a skillet over medium heat. Add 1 pound of lean ground turkey and ½ cup of chopped onion. Cook for 4-5 minutes until browned.
  3. Finish the Taco Filling: Stir in the 15-ounce can of drained black beans and a small can of green chiles. Add remaining taco seasoning and a splash of water. Simmer on low heat for 15 minutes.
  4. Build the Tacos: Preheat the oven to 425°F. Lay out the tortillas on a baking sheet, sprinkle cheese over each, and add the turkey mixture.
  5. Bake the Tacos: Bake for 1-2 minutes until the cheese melts. Fold each taco, brush with avocado oil, and bake for an additional 10-12 minutes until golden brown.
  6. Serve: Remove from the oven and serve hot with the creamy avocado sauce.
