Step-by-Step Instructions
  1. Prepare the Béchamel Sauce: In a medium saucepan, melt butter, whisk in flour to form a roux, then gradually add milk, cooking until thickened.
  2. Cook the Lasagna Noodles: Boil salted water, add noodles, cook until al dente, drain, and cool under cold water.
  3. Prepare the Cheese Mixture: Combine ricotta, mozzarella, Parmesan, season with salt and pepper.
  4. Assemble the Lasagna: Preheat oven to 375°F, layer béchamel, noodles, cheese mixture, spinach, and mushrooms, repeating until ingredients are used.
