Method
 

Step-by-Step Instructions
  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add 1 chopped onion and sauté for about 5 minutes until translucent and soft.
  2. Incorporate 2 minced garlic cloves and sauté for 1 minute until fragrant.
  3. Add 4 cups of broccoli florets and 4 cups of broth. Increase heat to boil, then reduce to simmer. Cook for 10-15 minutes until broccoli is tender.
  4. Blend the soup using an immersion blender until smooth. Leave some chunks if preferred.
  5. Return soup to medium heat. Stir in 1 cup of heavy cream and mix in 2 cups of shredded cheddar until cheese melts.
  6. Season soup with salt, black pepper, and optional paprika. Adjust thickness if desired with a flour slurry.
  7. Ladle into bowls and garnish as desired. Serve warm.
