Ingredients

For the Soup Base
  • 6-8 slices Bacon Adds savory depth and crunch; substitute with turkey bacon or omit for a vegetarian option.
  • 2 tablespoons Butter or Olive Oil Used for sautéing vegetables; opt for olive oil for a healthier alternative.
  • 1 medium Onion Provides an aromatic base and sweetness; shallots can be used for a milder flavor.
  • 1 cup Carrots Adds natural sweetness and texture; can be replaced with celery for a different taste.
  • 4 cups Chicken Broth Offers a rich liquid base; use vegetable broth for a vegetarian version.
  • 16 ounces Gnocchi The main carbohydrate for heartiness; gluten-free gnocchi works well if needed.
For the Creaminess
  • 1 cup Heavy Cream or Half-and-Half Gives the soup its creamy consistency; substitute with evaporated milk or a non-dairy alternative to lighten the recipe.
  • 2 cups Shredded Cheddar Cheese Provides flavor and creaminess; try gouda or mozzarella for a unique twist.

Equipment

  • large pot

Method

Preparation Steps
  1. Cook the bacon in a large pot over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, leaving a tablespoon of fat in the pot.
  2. Add 2 tablespoons of butter or olive oil in the same pot and sauté 1 diced onion and 1 cup of sliced carrots for about 5 minutes until tender.
  3. Pour in 4 cups of chicken broth and bring to a gentle simmer, about 3-5 minutes.
  4. Reduce heat to low and mix in 1 cup of heavy cream, season with salt, pepper, garlic powder, and thyme. Gradually stir in 2 cups of shredded cheddar cheese until melted.
  5. Add 16 ounces of gnocchi to the pot, cooking for 2-3 minutes until they float to the surface.
  6. Stir in the reserved chopped bacon and heat for another minute before serving.
