  • 4 fillets salmon skinless
  • 1 cup lump crab meat canned options work in a pinch
  • 1 cup cooked shrimp chopped finely
  • 4 oz cream cheese opt for low-fat
  • 2 tbsp mayonnaise or swap with Greek yogurt
  • 2 tbsp fresh parsley or chives / dill
  • 1 tsp garlic powder
  • 1 tsp paprika sweet paprika preferred
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup breadcrumbs use gluten-free if needed

  • 2 pieces lemon wedges for serving

Method
 

Cooking Steps
  1. Preheat your oven to 190°C (375°F).
  2. Carefully cut a pocket into the side of each salmon fillet. Season with salt and black pepper.
  3. In a medium bowl, mix together lump crab meat, chopped shrimp, cream cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, paprika, and minced parsley. Season to taste.
  4. Stuff each salmon pocket with the prepared filling, securing with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each side of the stuffed salmon for 2-3 minutes until golden.
  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes until the salmon flakes easily.
  7. Let the salmon rest for a couple of minutes, then serve with lemon wedges.
