For the Salad
  • 1 can Black Beans Rinsed
  • 1 can Corn Drained
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Red Bell Pepper Chopped
  • 1 small Red Onion Finely chopped, soaked in water
  • 1 medium Avocado Diced
  • 1 cup Shredded Cheddar Cheese
  • 1/4 cup Fresh Cilantro Chopped
For the Dressing
  • 2 tablespoons BBQ Sauce Your favorite variety
  • 2 tablespoons Ranch Dressing Can substitute with Greek yogurt
  • 2 tablespoons Lime Juice Freshly squeezed preferred
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. In a large bowl, add one can of rinsed black beans and one can of drained corn. Stir gently.
  2. Fold in halved cherry tomatoes, chopped red bell pepper, finely chopped red onion, and diced avocado.
  3. Sprinkle shredded cheddar cheese over the mixture and mix gently.
  4. Drizzle BBQ sauce and ranch dressing, along with freshly squeezed lime juice, over the salad.
  5. Sprinkle salt and pepper generously and toss gently.
  6. Let your Cowboy Salad sit for about 10 minutes to allow flavors to meld.
  7. Serve your Cowboy Salad chilled or at room temperature.
