Method
 

Steps
  1. Prepare the Pastry: Cut the butter and shortening into the flour using a pastry cutter until coarse. Gradually add ice water, mix to form a dough, wrap in plastic, and chill for 30 minutes.
  2. Cook the Filling: Brown the ground beef in a large skillet. Add onion, carrot, and celery; cook until softened. Stir in garlic and tomato paste, cook to caramelize.
  3. Deglaze: Pour in red wine or beef broth to scrape up browned bits, simmer and stir in broth, Worcestershire sauce, and bay leaves. Cool the filling for 10 minutes.
  4. Assemble the Pie: Preheat the oven. Roll out half the dough for the pie dish, fill with cooled meat mixture. Roll and place second dough over the top and seal.
  5. Bake: Brush top crust with egg wash and bake at 425°F for 15 minutes, then reduce to 375°F and bake for another 25-30 minutes until golden.
