- Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
- Mash 3-4 overripe bananas in a large mixing bowl until creamy.
- Mix in 1/3 cup of melted butter, 1 beaten egg, and a splash of vanilla extract with the mashed bananas.
- In a separate bowl, whisk together 1.5 cups of flour, 0.5 cups of brown sugar, and 1 teaspoon of cinnamon.
- Fold the dry ingredients into the wet banana mixture until just combined.
- Mix 2 tablespoons of cinnamon and 2 tablespoons of granulated sugar in a small bowl for the swirl.
- Pour half of the batter into the loaf pan, add half of the cinnamon-sugar mixture, and layer the remaining batter and cinnamon swirl on top.
- Bake for 60 to 65 minutes, checking for doneness.
