  • 1/3 cup Butter Melted; can use coconut oil.
  • 1 large Egg Can substitute with flaxseed meal mixed with water.
For the Cinnamon Swirl
  • 2 tablespoons Ground Cinnamon Feel free to adjust.
  • 2 tablespoons Granulated Sugar Adjust to liking.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
  2. Mash 3-4 overripe bananas in a large mixing bowl until creamy.
  3. Mix in 1/3 cup of melted butter, 1 beaten egg, and a splash of vanilla extract with the mashed bananas.
  4. In a separate bowl, whisk together 1.5 cups of flour, 0.5 cups of brown sugar, and 1 teaspoon of cinnamon.
  5. Fold the dry ingredients into the wet banana mixture until just combined.
  6. Mix 2 tablespoons of cinnamon and 2 tablespoons of granulated sugar in a small bowl for the swirl.
  7. Pour half of the batter into the loaf pan, add half of the cinnamon-sugar mixture, and layer the remaining batter and cinnamon swirl on top.
  8. Bake for 60 to 65 minutes, checking for doneness.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
