  • 1 Poblano Pepper optional for less spice
  • 1 White Onion
  • 4 oz Diced Green Chiles drained; choose mild or hot
  • 10 Eggs
  • 1.25 cups Milk dairy-free milk for dairy-free option
  • 1.5 cups Shredded Cheese plus more for topping
  • 2.5 cups Frozen Diced Potatoes or frozen hashbrowns
  • 0.5 tsp Salt
  • 0.5 tsp Black Pepper
  • to taste Chopped Cilantro for garnish
For Serving
  • 1 Avocado for serving
  • 1 cup Chunky Salsa for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 glass baking dish.
  2. In a nonstick skillet over medium-high heat, cook the chorizo for 5-7 minutes until browned.
  3. Sauté the sliced red bell pepper, poblano pepper, and white onion in the same skillet for 3-4 minutes.
  4. Whisk together the eggs, milk, salt, and black pepper in a large bowl until frothy.
  5. Layer frozen diced potatoes, cooked chorizo, sautéed veggies, and half of the cheese in the baking dish. Pour the egg mixture over.
  6. Bake for 40-45 minutes until firm and golden brown.
  7. Cool for 5 minutes, garnish with cilantro, and serve with avocado and salsa.
