For the Filling
  • 2 tbsp Olive Oil or Butter Bacon fat can be used for extra flavor.

  • 12 oz Smoked Sausage Andouille or Kielbasa, ensure sugar-free.
  • 1 lb Shrimp Peeled and deveined.
  • 1 medium Onion Finely chopped.
  • 1 Bell Peppers Red and green, diced.
  • 3 cloves Garlic Minced.
  • 2 tbsp Cajun Seasoning
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 pinch Cayenne Pepper Optional for heat.
  • 1 cup Shredded Mozzarella or Cheddar Cheese Optional.
  • 2 tbsp Fresh Parsley Chopped.
  • 2 stalks Green Onions Sliced, optional.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Trim the tops off the green cabbages and core their centers gently. Brush the insides with olive oil and season with salt and pepper. Place the cabbages upright in a baking dish.
  2. In a large skillet, heat a splash of olive oil. Add finely chopped onions and diced bell peppers, sautéing for 5–7 minutes until softened. Toss in the sliced smoked sausage and cook until browned. Stir in minced garlic, shrimp, and Cajun seasoning, cooking for an additional 2–3 minutes until shrimp is pink.
  3. Spoon the hot filling mixture into prepared cabbages, filling them generously. Sprinkle cheese in each cabbage if desired for a creamy element.
  4. Cover filled cabbages with aluminum foil and bake for 40–50 minutes until cabbage is tender. Remove foil for the last 10 minutes for golden tops.
  5. Remove cabbages from oven, let sit briefly, and garnish with parsley or green onions. Slice into wedges and serve hot.
