  • 1 medium Onion diced, yellow onions preferred
  • 2 cloves Garlic minced; garlic powder as alternative
  • 1 tablespoon Ginger freshly grated
  • 1 can Coconut Milk full-fat preferred
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Lemon Zest lime zest can be used

Method
 

Cooking Instructions
  1. Preheat oven to 180°C (350°F). Gather ingredients.
  2. Season cod fillets generously with salt and pepper on both sides.
  3. In a skillet, heat olive oil, add onion, and sauté until translucent, about 3–5 minutes.
  4. Add minced garlic and ginger to the onions; stir for 1–2 minutes until fragrant.
  5. Pour in coconut milk, lemon juice, and zest. Simmer for about 5 minutes.
  6. Place cod fillets in a baking dish, and pour the sauce over them.
  7. Bake for 20–25 minutes, until fish flakes easily with a fork.
  8. Let it rest for a few minutes before serving.
